Quesadilla Casserole

I wish I had a picture to share but I was hungry and too lazy to take a picture. Made this on Tuesday night and it was delicious! Made enough for dinner that night, lunch for me on Wednesday, and leftovers on Wednesday night!

Quesadilla Casserole
Adapted from McCormick recipe

1 Tb olive oil
1 lb extra lean ground turkey
1/2 cup chopped onion
2 cans (8 oz) tomato sauce
1 can (15 oz) black beans, drained and rinsed
1 cup frozen whole kernel corn
1 can (4 oz) chopped green chilies, undrained
2 tsp chili powder
1 tsp ground cumin
1 tsp minced garlic
1/2 tsp dried oregano leaves
1/2 tsp crush red pepper (optional)
6 corn tortillas
2 cups shredded reduced fat cheddar cheese

1. Brown turkey and onion in olive oil over medium heat. Add tomato sauce, beans, corn, and green chilies; mix well. Stir in spices. Bring to a boil. Reduce heat to low and simmer 5-10 minutes.

2. Spread 1/2 cup of the meat mixture on bottom of 13x9x2-inch baking dish sprayed with no-stick cooking spray. Top with three tortillas, overlapping as necessary. Layer with 1/2 of the remaining meat mixture and 1/2 of the cheese. Repeat with the remaining tortillas, meat mixture, and cheese.

3. Bake in preheated 350 degree oven for 15 minutes or until heated through. Let stand 5 minutes before serving.

Serve with guac and sour cream for added deliciousness!

THIS sounds AWESOME!!!!!! i'll have to try it soon!!!! Joe will be bringing it to work for lunch for a week! hahahaha. I wish you had taken a picture!!!!!! =)

quesadilla casserole sounds great! even without a picture :) I can imagine how good it looked at least :)
